Vegan Matcha Ice Cream Sandwich

Ingredients:
  • 1 pack of Rama vegan whipping cream 30%
  • Cane sugar or agave to taste
  • 4g Matchavia matcha
  • 20ml water
  • Wafer sheets
Instructions: 
  • Prepare the vegan whipping cream and whisk with sugar or agave until stiff. 
  • Heat water to 60 degrees Celsius and prepare Matchavia matcha in a bowl. 
  • Mix the matcha in 20ml of water until smooth and lump-free.
  • Slowly fold the mixed matcha into the whipped vegan cream, ensuring it remains beautifully airy.
  • Cut the wafer sheets into equal rectangles or squares.
  • Spread a layer of matcha cream onto one wafer sheet and cover with another.
  • Freeze for a few hours or overnight.
  • Before serving, let it thaw for 2-3 minutes.
Tips for an even better matcha dessert:
  • Adding vanilla will create a softer taste
  • Coconut milk will create a creamier texture
  • Pieces of white vegan chocolate are also excellent
  • You can also use ceremonial or signature matcha

Can I use a different matcha?
